Gilles Bouton took over the family vineyards in 1977 and has since expanded the domaine to 12 hectares, spread across 70 different plots in four of Burgundy’s most celebrated white wine villages — Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet, and Meursault. This fragmented holding is typical of the Burgundy region and gives the domaine an extraordinary breadth of terroir to work with. Gilles was joined in 2008 by his son Julien, and the estate sells most of its wines to private individuals. The Wine Buff is fortunate to receive a limited consignment of their wines once a year.

About This Wine

Puligny-Montrachet is home to some of the world’s most extraordinary Chardonnays — including the legendary Montrachet, Chevalier-Montrachet, and Bâtard-Montrachet. Sous le Puits is a Premier Cru vineyard in the southern part of the appellation, and this 100% Chardonnay from Domaine Gilles Bouton is a benchmark expression of the site. Tasting Notes

Colour: Pale primrose with golden highlights.
Nose: Elegant and restrained with a little toast from the oak, fresh lemon notes, and a subtle mineral character that speaks clearly of the Puligny terroir.
Palate: Significant tension and energy — this is a linear rather than rounded style of white Burgundy, with precise citrus fruit, fine acidity, and a mineral backbone that gives the wine excellent structure and focus.
Finish: Long and beautifully persistent with a clean, mineral-driven close.

Food Pairing

A Premier Cru of this calibre deserves considered food — grilled sole, scallops with a light butter sauce, or a classic roast chicken with tarragon.
