Salvalai Ripasso Monile 2021
Cantine Salvalai is a traditional Veneto producer crafting wines from the classic Valpolicella blend of Corvina, Rondinella, and Molinara. The Monile Ripasso is made using the traditional "Ripasso" technique — re-fermenting the wine on the fermented dregs of dried grapes used to produce Amarone. This second fermentation lasts 6 to 12 days, adding extra fragrance, alcohol, and body. The wine then ages for 10–12 months in Slavonic oak barrels (80%) and French oak tonneaux (20%), followed by a further 6 months of bottle refinement.
About This Wine
The Ripasso method bridges the gap between the lighter Valpolicella Classico and the more powerful Amarone, producing a wine of real depth and character. Salvalai's Monile expression is a textbook example — structured, generous, and built to age gracefully over the next several years.
