Salvalai Amarone Classico della Valpolicella 2020
Cantine Salvalai is a traditional Veneto producer dedicated to the classic wines of Valpolicella. Their Amarone Classico is crafted from Corvina, Rondinella, and Molinara grapes harvested at peak ripeness and dried using the ancient appassimento method — the same technique that has defined Amarone for centuries.
About This Wine
The grapes are harvested between late September and early October and immediately placed in wooden crates to dry in specially ventilated "fruit cellars" until February — losing around half their weight. This natural dehydration concentrates aromas, sugars, and polyphenols. After gentle pressing, the wine ferments for 20–25 days on the skins before malolactic fermentation. It then ages for 2–3 years, first in large Slavonian oak casks, then in smaller Allier oak barriques, followed by a further 6 months of bottle refinement before release.
Tasting Notes
Colour: Intense, deep ruby red.
Nose: Persistent and complex with dark cherry, dried fruit, sweet spices, and a distinctive fragrance of bitter almonds.
Palate: Vigorous and full-bodied yet soft, warm, and smooth with excellent concentration.
Finish: Long and lingering with layers of dried fruit and spice.
