Bodegas Dios Baco Oloroso

Bodegas Dios Baco is one of Jerez's most respected traditional producers, crafting a full range of classic sherry styles with an emphasis on authenticity and terroir. This fine Oloroso has spent 18 years ageing through a solera acquired by José Páez Morilla from Palomino and Vergara in 1992 — remarkably old and remarkably good. Oloroso is an oxidatively aged sherry — rich, dry, and complex, with none of the biological ageing under flor that defines Fino and Manzanilla.

About This Wine

An 18-year-aged Oloroso of exceptional depth and complexity — dry, nutty, and intensely flavoured, with the concentration that only decades of slow oxidative ageing in the solera system can produce. One of the great food sherries, and a wine of genuine rarity and quality.

Tasting Notes

Colour: Deep mahogany fading to amber and yellow hints
Nose: Full, rich, and fragrant — raisin, walnut, orange peel, and a hint of old barrels
Palate: Dry with savoury nutty notes and dried fruit — complex and layered
Finish: Terrific length with lingering dried fruit and walnut

Food Pairing

Excellent with red meat, aged cheese, game, and Asian cuisine. Also superb as a contemplative after-dinner drink.
