Domaine Colbois Aligote 2024
The village of Chitry-le-Fort lies just outside the famous wine region of Chablis. Like Chablis, the cool northerly climate and Kimmeridgian soils combine to create one of the best expressions of white grape varieties in Burgundy. The Colbois family history goes back to the beginning of the 20th century — Michel worked with his parents until 1970, then set up on his own with 2 hectares. He and his son Benjamin now work the vines and soils manually, so that the roots plunge deeply into the chalk and give a true expression of terroir. No chemicals are used, grapes are hand-harvested, gently pressed, and aged on their lees with little or no filtration.
About This Wine
Aligoté is Burgundy’s second white grape after Chardonnay — rare, underrated, and in the right hands, genuinely exciting. Benjamin Colbois is one of those hands. Farmed to HVE certified standards on the same Kimmeridgian chalk soils as Chablis, this Aligoté packs a wonderful punch: high acidity, lemony freshness, finesse, and a long finish. A wine for those who know.
Tasting Notes
Colour: Pale gold with a fresh, bright appearance.
Nose: Fresh and zesty — lemon, green apple, and a mineral, chalky edge.
Palate: High acidity with lemony freshness, real finesse, and a clean mineral backbone.
Finish: Long and refreshing — great with fish.
Food Pairing
A classic match for grilled fish, seafood, and goat’s cheese. The high acidity and mineral freshness also make it an excellent aperitif.
