Bodegas Dios Baco Pedro Ximenez
Bodegas Dios Baco is one of Jerez's most respected traditional producers, crafting a full range of classic sherry styles with an emphasis on authenticity and terroir. The Pedro Ximénez is made from sun-dried PX grapes — a process that concentrates the natural sugars to extraordinary levels — and aged for approximately 19 years in the solera system, developing the intense, complex character that makes this one of the world's great dessert wines.

Tasting Notes
Colour: Deep mahogany, almost opaque
Nose: Luscious ripe raisin, treacle, and coffee with dried dark fruit
Palate: Rich and viscous with pronounced flavours of prunes, black cherry, figs, and dried dark fruit
Finish: Intense and warm with a hint of citrus and an extraordinarily long close
Food Pairing
Wonderful with brie and aged cheeses, or poured over rich vanilla ice cream. Also excellent with chocolate desserts and dried fruit.
